Lemon bundt cake


They were very small pieces, so I had two.

I added some vanilla soy ice cream.

The bundt cake didn't rise. I followed the instructions exactly, but it didn't rise and was condensed and dry because of it.

The recipe called for me to spray the pan and dust it with flour, and than shake off the excess flour, which I did. Something didn't go so right here.

The cake was good but it just didn't rise, was kinda dry, and needed more lemon flavor. I'm going to try this recipe again with either apples, pears, or blueberries, instead of the lemon to add some moisture. I'm also going to buy new baking soda and baking powder, I'm wondering if mine might be out dated.

I have been holding on to this recipe since last year. I came across it in a magazine ,and what I liked was it was made with whole wheat flour. I decided today I would make it, so I went and picked up a bundt pan at the store today.

Doesn't it look delicious. I omitted the poppy seeds.

I used Wallaby organic lemon yogurt (which was so good and had real lemon in it).

Birthday cake/brownies

Birthday brownie's
Jeff requested to have homemade low fat brownies for his birthday instead of cake. So that's what I made, I bought a basic brownie mix and substituted applesauce instead of oil to make it healthier. You can do this in any baking recipe, you just need something in a liquid form in the batter to replace the oil, so applesauce is perfect. They were so good and extra most.
