Small adjustments

I made a few adjustments and gave oatmeal pancakes another try. Last time I made one it was too soft and I had trouble flipping it and getting it to stay together. But for this one I made a few changes and it turned out perfectly.

In the mix:
1/2 cup oats
2 TB. pear sauce
2 egg whites (to hold it together)
1/4 tsp. baking soda
dash salt
mix together and microwave for 30 sec. to soften the oats
stir and cook in a non stick pan

Topped with
almond flax butter (my fav)
peach all fruit spread
drizzle of raw white honey (also my favorite honey)
sprinkle of Tj's low fat mixed berry granola
dried cherries

I'm also sipping on a cup of peppermint green tea. I actually received this in my stocking last Christmas and I didn't really like it. But now I seem to have warmed up to it and it's not too bad.

Off to workout this morning before heading to work. I see a full body bootcamp workout in my future. I took yesterday as a rest day so I'm raring to go this morning. Well other then being sleepy because it's so early.

  2. Maybe the peppermint has aged through the year like a fine wine.
