Mexican favorites


Mmmmm, this has become one of my favorites lately. I made a taco salad mixing up a can of Tj's spicy black bean dip and a can of refried beans. Simple but spicy and beanie.

Featuring one of my favorite salsas.

To make the taco salad I assembled a bed of romaine lettuce, beans, salsa, reduced fat mozzarella cheese, and crushed baked blue corn chips. Nothing too monumental, but equally fantastic.

  1. Tasty looking salad, and great inspiration for healthy eating! I need to focus on things like that more, and eat less of the cookies and candy I've been making!
