Best kitchen tool


I picked up a hand held grater today at the store to help with dinner tonight, and oh my is it amazing. I can shred anything in a matter of seconds, it's going to change my life. I grated a whole zucchini and two carrots with this little guy.

Tonight I made some black bean burgers. I just love veggie burgers and with the right ingredients they can pack in some great nutrients.

Black bean burgers
2 cans drained black beans
1/4 cup oats
1 heaping TB. whole wheat flour
1 grated zucchini and give it a good squeeze to get rid of any liquid that was created after grating it
1 grated carrot
1 tsp. each of cumin, chili flakes, and garlic
dash of salt
1 very small finely diced onion
1/2 of a very finely diced red pepper
mix together and then smash until desired consistency
let rest in the fridge for 1hr. so the flavors can come together.

I made some into patties and some into balls and baked them at 300 degrees for 40 min., flipping after about 25 min.


I made mine into a burger salad. I made a pile of mixed greens and added some bell pepper, lemon cucumber, cherry tomatoes, and one grated carrot. I'm telling you grated veggies mix together so much better. Grated veggies would be a great way to add some more veggies into sauces and soups.

I topped my salad with some cilantro and jalapeno hummus and salsa, it made a delicious dressing. I also enjoyed a couple cheddar pumpkin seed Dr. Krackers, they are super crispy and delicious.

  1. that definitely comes in handy! i have a crappy old one that does NOTHING for shredding veggies.. shredded my finger nails more than it has a carrot. haha

  2. Oh I heart my grater too! Mmm shredded carrots! Actually just used mine yesterday to make zucchini muffins! Your burgers look delicious..love the recipe!
