Blueberry muffin coffee cake


This afternoon I found some time to do some baking.

I made blueberry coconut coffee cake muffins. They are a cross between a muffin and coffee cake, which makes them the perfect combo.

1 1/2 cups whole wheat pastry flour
1/2 cup oat bran
1/2 cup regular oats
1/4 cup sucant or other sugar
1 tsp. baking soda
1/4 tsp. salt
mix dry ingredients together

1/3 cup pear sauce
1/3 cup raspberry applesauce
1 cup soymilk or milk of your choice
1 TB. coconut butter
mix together and add to dry ingredients

stir in 1 cup blueberries
add to muffin tins and sprinkle unsweetened coconut on top
bake at 325 degrees for 15 min.
