Texture

My oatmeal pancakes always seem to vary each time. Sometimes they are oatier and sometimes they are fluffier. I prefer the oatier one's, but today was a little fluffy.

The toppings though made the oat cake. I smeared on some Justin's chocolate peanut butter and another smear of peach all fruit spread. Topped off with a little crunch from some Yogi walnut spice granola. It was a brand new box so the top was full of yummy clusters, my favorite.

Enjoy your Saturday and any holiday activities you have planned. I can't wait until tomorrow. I have a really fun holiday activity planned with some friends.

Frosty's come to town

It's one icy morning. Everything has a layer of frost on it. I think I will be hanging out in my pj's and letting it warm up a bit before venturing out this morning.

I enjoyed a perfect breakfast on such a day. I really love these oatmeal pancakes, they are delicious.

In the batter:
1/2 cup oats
2 TB. applesauce
2 TB. soymilk
dash Bob's cinnamon spice hot cereal (to thicken up the batter)
dash whole wheat pastry flour (also to thicken the batter)
dash salt, cinnamon, and baking soda
a few raisins
mix together and microwave for 30 sec.
stir and add to a non stick pan
cook on both sides

Topped with
almond flax nut butter (but of course)
warmed up applesauce with a dash of cinnamon
sprinkle of low fat almond vanilla granola
a few raisins

I never like following recipes and even measuring can be a little annoying. I usually do my cooking with a little experimenting and years of knowledge from cooking in the kitchen. I like to use recipes as an idea and as a base for measurements and ingredients.

In your own kitchen do you feel as though you are a free spirit or that you have to follow a recipe exactly?

The early bird catches the worm

This early bird is getting tired of the early mornings. That's when some good oatmeal pancakes must come in.
In the mix:
1/2 cup oats
2 TB. Bob's apple cinnamon hot cereal
2 egg whites
1/4 tsp. baking soda
dash salt
3 TB. pear sauce
mix together
microwave for 30 sec.
cook in a non stick skillet

Patience is a virtue and I seem to have none. I always seem to get my pancakes too brown/slightly burnt. This was a tasty set of pancakes and really help perk up the morning.
Topped with
sunflower butter
raspberry all fruit spread
sprinkle of unsweetened coconut

It's national trail mix day

Who knew it was national trail mix day. In honor of the day Bear naked sent me some trail mix to sample.
All of the opinions and comments on this product are my own.

They have three trail mix flavors, cranberry protein, pecan apple flax, and chocolate cherry.

The cranberry is nice and soft and really delicious.

I love the pecan apple flax. It's full of dried apples, the kind that taste and look like homemade dried apples. The clusters in this trail mix were a little harder in this one, but I think it would be really good in something soft like oatmeal as a topping.

I made my new favorite recipe, oat cake. These are so good and I'm so in love with them.

Oat cake
1/4 cup oats
2 TB. oat bran
dash baking soda, cinnamon, and salt
few splashes almond milk
warmed in the microwave for 30 sec.
then cook in a non stick pan on both sides

Topped with
sunflower nut butter
sliced banana
dollop crofters raspberry all fruit spread
(I haven't had any fruit spread in such a long time, they are so good)

Fluff

Good morning. I had an idea for breakfast and it just didn't work.
I loved the oat cake the other morning that I made. So I thought I would adapt it a little, big mistake.

I added 2 egg whites for a little protein and it just made it too fluffy and not as thin, soft, and dense as the oat cake.
Fluff cake
2 egg whites
1/4 cup oats
2 TB. oat bran
splash soymilk
1/4 tsp. baking soda (I think this was too much because I could taste it)
dash salt
dash vanilla
mix together and microwave for 15 sec. to soften the oats
cook in a non stick pan on both sides

Topped with
almond butter
warmed up pear sauce
sliced peaches
sprinkle of unsweetened coconut

I prefer the traditional oat cake over this one. At least I had a good healthy filling breakfast to start my day. I'm off to work a very long day, see you tonight.

Oat cake is back

I whipped up a new recipe this morning. I made an oat cake and man was it good.

Oat cake
1/4 cup oats
2 TB. oat bran
1/4 tsp. baking soda
dash cinnamon
1 TB. pear sauce (you could use applesauce also)
2 TB. soymilk (or milk of choice)
mix together
microwave for 30 sec.
cook in a non stick pan on both sides

Topped with
sunflower nut butter (this stuff is so good)
few slices of banana
sprinkle of chia seeds
drizzle of pure maple syrup

I loved this recipe, it was dense like baked oatmeal in the middle and crispy on the edges. The only bad part was my pan got too hot and the oat cake got a little too toasty on both sides.

So sleepy

I'm so tired this morning. Taking care of two dogs is different then taking care of one cat. I kept waking up every two hours looking at the clock. The dogs were making dog noises all night long and roaming around the house. I'm just not used to that. I have two more nights of this, hopefully I will get more adjusted to it.

I walked back home in the dark and made breakfast before heading off to work.

Oat Cakes
3 egg whites
2 TB. oats
2 TB. Great Harvest pancake mix
2 TB. oat bran
dash cinnamon
mix together
cook in a non stick skillet on both sides
on one side I added frozen blueberries and some dark chocolate chips

Topped with
Tj's almond flax butter
warmed up organic applesauce (applesauce makes the best sauce on top of pancakes)
sprinkle of Yogi walnut spice granola for the occasional crunch.

I'm going to need a lot of green tea to get me through this morning.

Mini oatmeal pancakes

I'm still working on those mini oat cakes. These ended up being more like mini oatmeal pancakes. They were really good and I liked the mini part about them, but they were not the dense oat that I'm trying to get. I think I'll try it with some extra thick oats and maybe add some whole wheat flour.

3 egg whites
1/4 cup oats
2 TB. oat bran
1/4 tsp. baking soda
dash salt
mix together
cook in non stick pan on both sides
topped with
fresh ground peanut butter
warmed up applesauce
unsweetened coconut

Any suggestions, I would like it be almost like an oatmeal cookie in a way.

Oat cakes

Fruit oat cakes
3 egg whites
2 TB. apple cinnamon hot cereal
2 TB. oat bran
2 TB. oats
1/2 tsp. baking soda
dash salt
very small splash soymilk
mix together
cook in non stick pan on both sides
on one side I added blueberries
topped with
raw almond butter
1/4 of a sliced banana
warmed up pear sauce

I wanted to make these into small circle's, so that they would be mini cakes but my pan was too small. They were really good, much denser and oatier than pancakes.

Enjoy your Saturday, I'm off to work again. I get the afternoon and tomorrow to relax.
