After the holiday's I almost forgot all about pumpkin, or maybe I just needed a break. Either way I'm ready to enjoy it in all kinds of ways once again.
I'm out of egg's so I made overnight oats so that I could get some protein from the yogurt and milk. I followed Kath's recipe for pumpkin overnight oats, she is the queen of overnight oats.
I topped it with pure maple syrup, dark chocolate chips, all natural pb, and low fat vanilla almond granola. Unfortunately this is the second time I have tried overnight oats and I'm just not a big fan. I think it's a texture thing, but I have given up trying to like it.
