Perfect combination

I took a little help from the store with tonight's dinner. I picked up a free range all natural rotisserie chicken, I love how tasty and convenient these guys are. It's always the most tender and juicy chicken, and it only costs about a dollar or two more then if I cooked it myself.

I also roasted the most perfect sweet potatoes in the oven. The magic roasting number is 400 degrees for 1 hour, equals perfection.

I piled up some mixed greens and topped it with the sweet potato chunks, raisins, crushed up food should taste good sweet potato chips, feta, and a dollop of jalapeno and cilantro hummus. Served with some slices of chicken. This was a perfect combination.
And dinner would not be complete without a nightcap of herbal tea. I picked up a variety tea box and enjoyed a cup of raspberry zinger. Perfect for a night with some snow flakes fluttering outside.

  1. That looks like a great meal- no need to feel ashamed about the roitisserie, I do it all the time! Must be a tea day for everyone!

  2. I'll give your magic number for cooking the sweet spuds a try. I never seem to get them just right.
