Winter delights


I'm not saying good bye to fall treats and eats, but I am saying hello to winter delight. Hot pancakes, oatmeal, soups, stews, casseroles, and lots and lots of tea.

So this morning I could have nothing else for breakfast othen then hot steaming cakes.

I have been out of Kodiak cake mix and boy have I missed it. They really are the world's BEST pancake. I made some mini cakes with dark chocolate chips. Topped with a little Justin's chocolate pb on one, a drizzle of pure maple syrup, 1/4 of a diced pear (see there's a fall favorite), and finished withe some cinnamon and Tj's low fat vanilla almond granola.

My new thing is granola on pancakes. It adds a nice contrast of soft and crunchy.

I also had three scrambled egg whites seasoned simply with sea salt, pepper, and dill and finished off with a little reduced fat cheddar cheese. I felt like I needed a good dose of protein this morning. Especially since I'm heading to the gym a little later this morning.

  1. Yesterday I fixed a pumpkin pancake mix I bought at Trader Joe's. It was yummy too.
