The makings of dinner


I told you it's time for winter eating and casserole making. I decided to use some of the new products I picked up at Trader Joe's yesterday to make an Italian inspired casserole.

I cooked one cup of whole wheat couscous per instructions and mixed it with some Italian seasoning, diced zucchini, grated carrot, and chopped up sun dried tomato chicken sausages. On top of the mix I added some brushetta mix and a sprinkle of feta. I baked it in the oven for 30 min. at 350 degrees.

Paired with a little whole wheat naan bread topped with some local carrot honey.

It was a tasty casserole but those little couscous's sure go everywhere.
