Pancake method


It is such a foggy dreary morning. The perfect setting for a nice cup of hot tea and some pancakes.

I made mini Kodiak cakes with banana and dark chocolate chips. I also used my friend John's method for cooking pancakes. You cook the pancakes and put them on a plate to rest as you cook all of them. Once done each pancake goes back in the pan on both sides to crispen it up, and to warm it back up. I used to do the oven method where you set the oven at 200 degrees to keep them warm while cooking a batch. The problem is it makes then wimpy and a little soggy.

I also had a little egg white scramble with some of last nights turkey breakfast sausage.

The pancakes were topped with some marionberry all fruit spread and a drizzle of pure maple syrup.

  1. I've tried the Kodiak pancakes and they are wonderful. That's all we're eating from now on.

  2. Your pancakes remind me of an interesting restaurant we have in Portland. It's called Slappy Cakes. It's like Benihana for pancakes. There's a griddle at your table and you buy a bottle of different types of batter and goodies to add in. Then you cook your own, although you don't have to they will do it for you if you don't want to mess with it. I hear it's great.
