A good find

Workout
I saved my workout for after work today, since I had a very sleepless night last night. My workout was a mix of everything working the whole body in a bootcamp workout format.
Dinner

While at the farmers market at the beach on Saturday I found some pimento's. I have never seen pimento's other then in a jar. I scooped up five of them with the idea to roast some and make a bean soup with the others.

Using some diced pimento, baby onion, and this green Chile from my produce delivery I diced it all up and added it to two cups of dried beans that were soaked overnight. I used some white, back, and red beans to make up some baked bean soup. To the veggies and beans I added one box of Tj's tomato and roasted red pepper soup along with some chili flakes, garlic, cumin, salt and some bbq sauce. I let it simmer in the crock pot on low for 11 hrs.

I enjoyed coming home and having dinner ready and walking into a house filled with the delicious smell of soup.

I topped my delicious bowl of soup with some Greek yogurt and a sprinkle of Organic Valley reduced fat Monterrey jack cheese.

I also munched on a sampling of crudite, some carrots and sweet potato Food for Life chips.

  2. I've never seen a fresh pimento either. I guess I thought they just grew in jars. They look like a tomato.

  3. If it says pimento in a recipe I told use them. They have a funky flavor, but I'm sure many people like them.
