Sunday well spent

The weather has been cool but sunny today, a perfect summer day.

Thomas spent his afternoon contemplating life and enjoying some fresh air.

Jeff and I spent our day doing some serious gardening. We have some parties coming up this month (a BBQ and a baby shower), that we want to get the house ready for. I did some sprucing up of my plants and we put down some fresh bark dust.

I'm probably going to be a little sore tomorrow from all the bending, shoveling, and lifting. It was different movements then my body is used to doing on a daily basis.

I also baked up a super quick and easy batch of oatmeal cookies.

Oatmeal cookies
1 cup whole wheat pastry flour
2 cups Bob's extra thick oats
1/4 cup evaporated cane juice
1 tsp. baking salt
1/4 tsp. salt
1/4 tsp. cinnamon

wet ingredients
1 egg and 1 egg white
1/2 cup applesauce
1 tsp. vanilla extract
mix together
mix wet ingredients with dry ingredients
add 1/2 cup raisins
2 TB. Theo's dark chocolate cut into small chunks

Bake at 350 degrees for 8 min.

Eat and enjoy. These cookies are really easy to make and nice and oaty just like an oatmeal cookie should be, and without all the butter.
