Summer soup

I made an easy summer soup for dinner tonight, yes soup in the summer.

I started with some carrots, onion, and a whole bunch of spinach.

In the soup was:
1 box Tj's red pepper and tomato soup
1 can diced tomatoes
1 can garbanzo beans
1 cup whole wheat fusili pasta
1 cup water
1 diced onion
3 diced carrots
basil chicken sausage
spices
bring soup to a bowl and simmer for 20 min.
at the end add the diced spinach and let the soup come to room temperature.

The best way to have soup in the summer is to keep it fresh, full of summer flavor, and serve room temperature.

We also shared some salsa and chips mix.

  2. That looks wonderful! I also like how you paired it with salsa and chips - frankly (in my humble opinion), everything can go with salsa and chips!
