Cold dinner on a hot night


I had a special request made by Jeff to make some herbal peach iced tea.

I went out and cut a bunch of fresh herbs and arugula for dinner.

Earlier in the day I picked up a free range rotisserie chicken from Market of Choice. I wanted a dinner that would require minimal cooking so that I wasn't heating up the house that's already hot. I made a cold pasta salad for dinner with some whole wheat rotini pasta, shredded rotisserie chicken, the roasted asparagus from lunch, red onion, diced carrots, roasted red pepper, sun dried tomato with some of the oil squeezed out, feta, balsamic vinegar, pesto, Tj's roasted artichoke tapenade, salt, pepper, lemon thyme, and basil.

I pretty much just threw together whatever I had. It turned out so good and was a perfect cold dinner on a 100 degree day.

I paired it with leftover watermelon from the other night, some blueberries, and a little mint. This was a perfect meal for Project stay cool and healthy. When it's hot out cold salad's whether it's a veggie, pasta, rice, or fruit salad work perfectly. I would also suggest if you need to cook anything to do it in the morning when it's cooler, instead of at dinner time when it's so hot in the kitchen. I know sometimes schedule wise most people can't prep dinner in the morning due to time, but it's just a suggestion if you are able to.
