For two servings:
1 can albacore tuna (I used
Tj's)
sun dried tomatoes
1 TB. pesto
1 TB. rice vinegar
feta and
Parmesan cheese
zucchinidill, oregano,
garlic, salt and pepper
leftover whole wheat
penne from last night that I saved for a second meal
(Planning ahead saves time)

I wasn't the biggest fan of these baked beans. I ended up not eating mine. They are a little to firm and have a strange flavor. I'm thinking of making my own in the crock pot, and freezing them for summer dinners.
Anyone got any good vegetarian recipes?
I served the tuna on top of some arugula for some nice added healthy greens.

I'm still drinking up that water.
