For two servings:
1 can albacore tuna (I used
Tj's)
sun dried tomatoes
1 TB. pesto
1 TB. rice vinegar
feta and
Parmesan cheese
zucchinidill, oregano,
garlic, salt and pepper
leftover whole wheat
penne from last night that I saved for a second meal
(Planning ahead saves time)
I wasn't the biggest fan of these baked beans. I ended up not eating mine. They are a little to firm and have a strange flavor. I'm thinking of making my own in the crock pot, and freezing them for summer dinners.
Anyone got any good vegetarian recipes?I served the tuna on top of some arugula for some nice added healthy greens.
I'm still drinking up that water.
