I had to break down and stop at the produce stand today. I have pretty much ran out of veggies. I picked up some grapes, mushrooms, red pepper, and zucchini.
For dinner I made an easy pasta dish. It was whole wheat spaghetti with Tj's basil chicken sausage, mushrooms, diced red pepper, diced zucchini, herbs, and Tj's red pepper and eggplant spread. I topped it with some Parmesan cheese and feta.
Jeff and I shared this little plate of grapes also.
I love that TJ's Pepper + Eggplant spread!! Never had it on pasta though...I bet that's delicious!
