Friday night easy soup night

Jeff was gone tonight so I planned something for dinner that I have been wanting to make for a while. I haven't made it because he wasn't so thrilled about having lentil soup. I on the other hand love lentil soup. I saw this coconut lentil soup recipe on Angela's blog and knew I had to make it.
