Burger night


For dinner we had sun dried tomato Gardenburgers. This was the first time I have had this variety. It was good but I prefer the original Gardenburger. The Gardenburger was topped with laughing cow cheese, red pepper and eggplant spread, and a nicely ripened organic tomato from my produce delivery. I don't like raw tomatoes but this one was nice and soft, but not too soft. I paired it with some roasted sweet potatoes and red potatoes, roasted in the oven at 300 degrees for 1hr with some herbs and spices.


Topped with some greens.

I'm using up all my produce before we leave on vacation along with anything else that needs to be used.
