Beans and eggs


I roasted some more asparagus tonight that was getting wilted. It wasn't as good as last night, since it was a little soft. I also had half of a Great Harvest whole wheat roll with some strawberry all fruit spread.

Mixed beans with a fried egg. I saw this on Jenna's blog, that she ordered at a restaurant and I thought it looked really good. Her version was with chickpeas, but I only had a can of white beans and a can of mixed marinated beans.

Bean Recipe
1 can white beans
1 can marinated beans
spices; oregano, basil, parsley, garlic, salt, pepper
1 tsp. of pesto
2 TB. diced and sauteed onion
1 red pepper sauteed
Topped with 1 whole egg and 1 egg white

I skipped eating the yolk on mine. I haven't had an egg yolk in such a long time that I think I lost my taste for them.

This dinner combination was so good. I just wish the asparagus would have been fresher.

  1. I love egg yolks! Not so much on their own, but I love whole eggs. I never really got into egg whites, though I do love the egg white wraps at Starbucks. I think I feel guilty wasting the yolk when I'm cooking at home.

    You're totally making me wish I had a Great Harvest roll - they are SO GOOD!
