Perfect fall breakfast

It's back to raining this morning. I was planning on going on a bike ride, but I guess that's probably not going to happen. I should have went yesterday when the weather was perfect, but not enough time in my schedule yesterday.

I wanted a perfect rainy fall day breakfast this morning. So I decided to make the most perfect chunky apple oatmeal pancakes.

Chunky apple oatmeal pancakes
1/2 cup oats
1 TB. whole wheat pastry flour
dash salt and cinnamon
1/4 tsp. baking soda
2 egg whites
splash almond milk
mix together
microwave for 30 seconds
mix again
cook in a non stick pan on both sides
I made mine into two smaller pancakes


Topped with
Tj's chunky spiced applesauce (it's so good, and really chunky)
drizzle of pure maple syrup
sunflower nut butter
sprinkle of Yogi walnut spice granola (this is one of the best granola for toppings)

These pancakes were amazing. The applesauce reminded me that I need to make my own applesauce. Every year I make homemade pear applesauce and freeze it to enjoy throughout the year. Since it's the end of September I really need to get on it and start making some.

  3. I love love love applesauce on potato pancakes. Why has it never occurred to me to put it on regular pancakes?!
