Baking


Yesterday I made some breakfast cookies. They are super healthy cookies that are a quick go to meal.

Fruit and nut breakfast cookie
1 egg and 1 egg white
1 tsp. vanilla
1/4 cup dried cranberries
1/4 cup diced dried figs
1/4 cup pear sauce
1/4 cup evaporated cane sugar
1 TB. coconut butter
mix together
in a separate bowl mix
1.5 cups whole wheat pastry flour
1/2 cup wheat bran
1/2 tsp. cinnamon
mix dry ingredients into wet ingredients
add 1/4 cup sliced almonds
bake at 350 degrees for 12 min.

This morning I had a couple little cookies and they were soft and delicious. I think next time I would substitute the figs for another dried fruit. The cookies were perfect fresh from the oven yesterday, but a little dry this morning. I would up the pear sauce to 3/4 to 1 cup.

I also had half of a sliced apple with a little sunflower butter for breakfast.
