Light and simple

Since it was Monday that meant another early morning workout. I started with 20min. on the spinning bike followed by resistance training working the whole body. In between sets I jump roped in place to keep my heart rate up. I finished with 20 more min. on the bike. I really wanted to finish with 15 min. of yoga but I just couldn't squeeze it all in.

For dinner I kept it light and simple.

I made an egg white patty and topped it with sauteed zucchini, a veggie burger, and some spicy hummus.

The zucchini was a little to big and thick so it didn't mix so well. I probably needed more then just hummus on it also to bring all the flavors together. Usually this combo is amazing, but tonight it was just okay.
