Fresh greens


As per my usual Monday's I was up early before the sun to get my workout in. It was hot in my house this morning so I anticipated a really sweaty uncomfortable workout, but it was actually fairly pleasant. I started with 20 min. on the spinning bike followed by a full body workout with 1 exercise per muscle group with 2 sets each. I finished with another 20 min. on the bike with lots of speed work.

Dinner was made with a little help from Market of choice. I used on of there free range organic rotisserie already cooked chickens. I shredded the whole chicken and added some whole wheat fusili pasta along with some broccoli, red pepper, and asparagus.

I seasoned it with some fresh basil and lemon thyme along with some dried basil, oregano, thyme, salt, and pepper. I also added some Newman's light balsamic vinaigrette, sun dried tomatoes, feta, rice vinegar, and jalapeno and cilantro hummus. I topped it off with some grated fresh pecorino Romano cheese.

  1. Oh my goodness yum! Pasta salad sounds perfect for summer. I can promise I'll be making this soon. How simple. :)
