Fiesta

It's Cinco de Mayo
In honor of Cinco de Mayo we had to have some Mexican food for dinner. I made some enchilada's my style, it's a mix between burritos and enchilada's.

It started with some new products I hadn't used before.

Amy's black bean refried beans

Woodstock farms part skim mozzarella cheese.
Let me just say this was one of the best cheese that I have had in a long time. I will be getting some more of this stuff.

Whole wheat tortilla's, these were super soft and fluffy. They were so good.

Paired with mix greens toasted in a small drizzle of vinaigrette and some lime juice.

I made the burrito/enchilada with shredded chicken breast, refried beans, salsa, and some Greek non fat yogurt mixed with taco seasoning. I rolled them into burritos, put them in a casserole pan side by side and topped them with some of the Greek yogurt mix and salsa. I baked the casserole for 30min.
