I had this little chunk of a Great Harvest whole wheat roll with almond butter in the afternoon to
tide me over until dinner.
I used a couple Tablespoon's of this brushetta mix as a marinade for tonight's dinner, which was
salmon.
Roasted cauliflower
Tossed in garlic salt, pepper, herbs De Provence, oregano, and thyme. I also added 2tsp. of Newman's light balsamic vinaigrette and sprinkled in some feta. I roasted it for 30min. at 350 degree's.
I had one of the leftover sweet potatoes from last night, wild Chinook salmon on a bed of arugula, and the roasted cauliflower. This was a powerhouse of nutrients dinner. I'm working on eating more omega 3's.
