Easter dinner

Coconut fig bread
4 dried figs re hydrated in some hot water
in a food processor mix the re hydrated figs with 1 TB. honey, dash cinnamon, and salt
spread mix on Tj's whole wheat naan bread
top with unsweetened coconut
bake at 350 degree's for 15 min.
top with a drizzle of honey after it comes out of the oven

Easter Egg souffle
in a saute pan cook 1 diced zucchini, 5 diced mushrooms, and 1 diced red pepper
in a large bowl mix 10 egg whites and 2 whole eggs with 1 cup organic non fat milk
spices: 1 tsp. basil, oregano, and a dash of salt and pepper
mix everything together
bake at 400 degrees for 15 min.
top with tomatoes
bake 10 more min.
after it's done top with Parmesan cheese

The milk makes it so light and fluffy, it was delicious. I will be making this again.
