Quinoa delight


Quinoa and basil chicken sausage

Cook quinoa per instructions
In saute pan cook
Tj's basil chicken sausage
Tj's pinjur sauce (red pepper and artichoke sauce)
diced zucchini and carrot
spices (garlic, basil, oregano, thyme, garlic flakes, and red pepper flakes)
add cooked quinoa at the end, mix, and serve
Green sauce
In blender mix 2 cups arugula
salt, and pepper
juice of 1 fresh lemon
1 tsp. olive oil
1 Tb. water
2 Tb. Tj's red pepper and artichoke tapenade
blend until it's all mixed

On the side a nice small piece of whole wheat naan bread, with some peach all fruit spread.
