Mediteranean Salad


This was the biggest salad I could make. This salad was better than any salad you would get at a restaurant. It was a base of mixed greens, shredded carrots, and chopped asparagus tossed in 1tsp. of Newman's vinaigrette. On top was diced roasted red pepper, diced artichoke, feta, a dollop of Tj's jalapeno and cilantro hummus and Tj's roasted red pepper hummus. On the side Great Harvest sweet wheat n oat bread cut into cubes and toasted for croutons, and also on the side a skewer of chicken.
