Breakfast for dinner

Frittata's with a slice of sweet wheat n oat bread and herbal tea

Frittata's (makes 18)
10 egg whites
2 whole eggs
1 tsp. parsley and Italian herbs
wisk together
and add
diced roasted red pepper and diced zucchini
cooked Tj's turkey bacon
whisk together
spoon into muffin tins and add a dollop of
Tj's brushetta mix to each muffin and top with reduced fat shredded cheddar cheese.

On the side a slice of toasted Great Harvest sweet wheat n oat bread with Tj's almond butter with roasted flax seeds, and St. Dalfour apricot all fruit spread.


  1. Cooking them in muffin tins is a great idea. I'm thinking of making a batch and freezing them.

    For breakfast or dinner, I'm coming to your place!
