Super bowl snacks

We skipped lunch and instead followed our super bowl tradition of having mid day appetizers. We had Tj's ratatouille with roasted vegetables, that were in the freezer left over from Christmas. Along with my famous Mexican layered dip (see recipe below) served with baked tortilla chips, and mini vegetarian sandwich's (see recipe below).

Mexican dip:
Bottom layer: 1 can non fat refried beans
Second layer: 1 jar salsa
Third layer: 1 cup fat free sour cream mixed with 2 Tb. taco seasoning
Top with 1 diced tomato and 1 diced red pepper
You can also add a layer of guacamole

Vegetarian mini sandwich's:
2 Tj's whole wheat flat bread
Spread hummus on on flat bread
Add 2 gardenburgers
top gardenburgers with 2Tb. tj's brushetta mix
sprinkle feta on top
layer arugula on top
top with second flat bread and slice into wedges
