Sweet Potato

Stuffed sweet potato
I roasted some sweet potatoes in the oven at 375 degrees for 1hr.

In a saute pan I added diced red pepper, diced shallot, 2 cloves diced garlic, and a dash of pepper, oregano, and thyme. After browning the shallot and red pepper I added some diced TJ's Turkey polish sausage. I also added some broccoli florets at the end of the cooking just to warm them up.

In a separate pan I cooked some quinoa per box instructions. Once the quinoa was finished cooking I added it to the saute pan with the meat and veggies. I mixed it together and than topped the sweet potato and sprinkled a little feta.
