Muffin breakfast bake

Everyone seems to making these breakfast bakes lately, like Ashley and Kath. Especially the buckwheat variety.
I knew this was something that I wanted to try and the ingredient list looked very simple to make. When I pulled out my little ramekin from the oven it smelled just like banana bread, yum.
I'm not a big fan of buckwheat flour, I find it too dense. So I tried mine with some spelt flour and a little bit of muesli added for some texture.
Unfortunately mine came out a little too dense in texture. It needs a little tweaking before coming up with the winning recipe. I would like to try using oat flour or maybe even adding some almond flour next time.
My little bake had half of a banana mixed into the dough and surprise in the middle of blueberries. Topped off with almond flax nut butter, coconut, and a few dark chocolate chips for a Sunday treat.

The world's best hot cereal

I've been wanting to share the most delicious hot cereal combination that I stumbled upon.
In the mix:
1/4 cup Bob's spice n nice hot cereal
2 TB. Bob's muesli
water and splash almond milk
2 TB. unsweetened applesauce
dash cinnamon and sea salt
mix together and cook on low stirring often.

It creates the most creamy texture combination. And the stirred in unsweetened applesauce brings a nice natural sweetness to the whole thing.
Topped simply with Tj's almond flax nut butter and Bob's super finely shredded unsweetened coconut.

I may have eaten this combo for breakfast everyday for the last week. It is so addicting between the texture and the natural sweetness. I just can't get enough.

Another year


It's a beautiful day and it's also MY BIRTHDAY!!!

Since it's my special day I needed a special breakfast.

I made a bread casserole with a sweet twist.
I used up 5 slices of Great Harvest cranberry nine grain bread diced up and mixed with 2 whole eggs and 4 egg whites, 1 cup organic non fat milk, dash cinnamon, and a dash salt. To sweeten it up and add that special treat to it I added 1/4 cup dark chocolate chips, 1/4 cup coconut, and 1/4 cup raisins.

Baked in the oven at 350 degrees for 45 min.

Drizzled with a little pure maple syrup and served with some fresh fruit and enjoyed with a new birthday tea from my best friend Michelle.

I have to go to the dentist this morning, I know on my birthday, yuck. It was the only appointment I could get. After that I'm spending the day with Michelle and little Henry. Were painting our own pottery at a local place.

A classic combo


Blah I'm sick, it finally got me. I'm taking today off from working and but unfortunately I must go to work. Before heading out I had a bowl of one of my new favorites. I warmed up some Kashi seven grain nuggets with some soymilk for about 30 sec.

Topped with some sliced banana and raisins, what a classic combo.

Something new but old


I have been really craving grape nuts lately. It's been so long since I have had them. I used to love them drenched in sugar, but doesn't every kid. I picked up a box of Kashi's version and let me tell you they taste just like grape nuts brand but are even healthier.

I like hot food in the mornings so I added some pear sauce and soymilk to the nuggets, stirred it up, and microwaved it for about 30 sec.

Topped off with a little sliced banana and some coconut. This bowl was so delicious. I'm putting these little nuggets to use in a few recipes coming up.

I finally have a Wednesday off and I'm heading to my favorite class dancers workout and kickboxing. Due to the holiday's my schedule has been a little different and I haven't been able to make it to class. Since I haven't been there in about three weeks I'm sure it's going to kick my butt and tomorrow I will be so sore.

Back to normal


Breakfast is served.
Back to work I go after a three day weekend. Good thing it's another short work week.

This morning I had leftover Christmas turkey sausage breakfast casserole. It was still tasty and easy to throw together.

I also had a little bowl of cereal with homemade applesauce on top with some soymilk and unsweetened coconut. I warmed the whole thing up in the microwave for 30 sec.

I'm taking today as a rest day from working out. I hit the gym early yesterday morning and did a really intense workout. It felt good to get my body moving after the holiday weekend.

It's the muffin man


Are shall I say the muffin lady, baking away in the kitchen this morning. I whipped up some whole wheat and flax blueberry muffins. I altered the mix slightly cutting down on the sugar by 1 TB. and the oil by 1 tsp. I also added one diced and smashed very ripe banana. The changes seem to have worked really well.

Resulting in a very moist and delicious muffin. I topped each muffin prior to baking with a crumble top. In the topping was 3 TB. Bob's muesli, 1tsp. evaporated cane juice, 1tsp. sucanant, 1tsp. melted Earth balance butter, and a dash of cinnamon. Mixed all together and sprinkled on top.

Enjoyed with an egg white omelet. I'm heading to the gym soon and this was a great breakfast to get me started.

Layers of flavor


For breakfast this morning I wanted something different, problem is I still haven't made it to the store to get groceries. I decided on french toast yet I didn't have a loaf of bread. I did however have some Great Harvest whole wheat rolls. I sliced one roll into three layers and dipped it in a egg mix of egg white, cinnamon, and soymilk.

I warmed up some spiced chunky applesauce and layered it in between each layer.

Once stacked up it was topped with some cinnamon, raisins, and pure maple syrup.

The combo was delicious but the roll ended up being a little too dense to be used for french toast. I think I'm going to have to stop at Great Harvest and get some bread so I can try this again.

I'm running a little late this morning. My cat woke me up a lot last night, he just didn't seem to be satisfied with anything.

A relaxing morning


I accomplished one thing this morning, sleeping in, with a little help from daylight savings. Although pancakes were the original plan for this morning they just didn't sound like what I wanted, that's rare. I felt more like having eggs. I made an egg white wrap in a whole wheat flat bread with some laughing cow herb cheese, a sprinkle of reduced fat cheddar cheese, a little dill, and some ketchup.

Paired with half of a honey crisp apple with cinnamon and almond flax nut butter for dipping. Honey crisp apples are by far the BEST apples.

The rain seems to have stopped this morning so there might be a bike ride in my immediate future. So far it's been a very relaxing morning, which is most needed.

Winters coming


It has definitely been fall weather with winter weather quickly approaching.

I started my morning with one of those delicious cinnamon maple scones. I topped it with the last bit of Tj's chunky spiced applesauce, this stuff is amazing I highly recommend it. I also gave it a little dusting of some unsweetened coconut.

Easy scones


I made scones. I have never made scones before, but these ones were so easy. Of course they had to have oats in them also.
Maple cinnamon rustic scones
Step 1: mix dry ingredients.
1/2 cup oats
2/3 cup whole wheat pastry flour
1/2 tsp. salt
1 tsp. baking powder
1 tsp. cinnamon
Step 2: add wet ingredients
2 TB. butter (my butter had expired so I used coconut butter)
cut the butter into the dry ingredients and work with your fingers until dry ingredients are crumbly
add 1/2 cup milk (I used soymilk) and 2 TB. maple syrup
Step 3: mix everything together
Step 4: make into 4 scones and top with a mix of sugar and cinnamon
Step 5: bake for 12 min. at 350 degrees

Stack and devour

I love how it only makes four so they stay nice and fresh. These scones are so good. Next time I would love to add in some diced apples or pears.

Michelle's B+B

Does my best friend know me or what?

We had some Tj's steel cut oats cooked on the stove. This was my first time having them, they were so creamy and delicious. I believe she cooked them in non fat organic milk.

Topped off with some peach, banana, walnuts, and a sprinkle of cinnamon.

I purchased some tea from a little tea shop in downtown Seattle yesterday.

I mixed some coconut pouchong and Autumn pear (which is just dried fruit). I thought they would mix together very well, and they did. I have some exciting cooking ideas for these two once I get back home.

What day is it?


Good Morning, is it Friday yet? I am just dragging this morning. Nothing a good cup of hot tea can't fix.

I went for a little something different this morning. I had a cinnamon raisin Ezekiel English muffin with 2 egg whites and 1 egg. Spread with a wedge of Laughing cow cheese and of course a little ketchup.

I also had half of a very little banana.

Simple real ingredients


Last night's fall crumble became this morning's breakfast. Because it has such simple real ingredients it was perfect to enjoy for dessert and for breakfast. The base is mostly just apples, pears, and oats, what more do you need for a breakfast.

I warmed some up this morning with a little almond milk poured over the top.

I love when breakfast is ready to go in the morning. It gives me something to look forward to and is so convenient.

Baking


Yesterday I made some breakfast cookies. They are super healthy cookies that are a quick go to meal.

Fruit and nut breakfast cookie
1 egg and 1 egg white
1 tsp. vanilla
1/4 cup dried cranberries
1/4 cup diced dried figs
1/4 cup pear sauce
1/4 cup evaporated cane sugar
1 TB. coconut butter
mix together
in a separate bowl mix
1.5 cups whole wheat pastry flour
1/2 cup wheat bran
1/2 tsp. cinnamon
mix dry ingredients into wet ingredients
add 1/4 cup sliced almonds
bake at 350 degrees for 12 min.

This morning I had a couple little cookies and they were soft and delicious. I think next time I would substitute the figs for another dried fruit. The cookies were perfect fresh from the oven yesterday, but a little dry this morning. I would up the pear sauce to 3/4 to 1 cup.

I also had half of a sliced apple with a little sunflower butter for breakfast.

Served for breakfast


I had one wild cat running around the house last night keeping me up all night. The only good thing was I knew I had an easy breakfast in the fridge waiting for me in the morning. I told you the pear apple crumble was so healthy and delicious that it could be served anytime, so today it is served for breakfast.
I topped today's bowl with some Harvest mix and a dollop of sunflower nut butter.

Dig deep


Last night I was trying to figure out what I was going to make for breakfast this morning. After looking in the pantry and realizing I'm out of pancake mix, oats, and only a smidge left of hot cereal, I had to dig deep. Then I saw a jar of Bob's muesli. I have only used it once, so I thought I would give it a try and make some stove top oatmeal.
In a pot combine:
Featuring 1/4 cup Bob's muesli
2 TB. quick cook oats
3/4 cups water
few splashes of almond milk
dash salt, cinnamon, and vanilla
stir and cook on low for about 10 min.
add 1/4 of a diced banana
stir

Topped with
almond butter
dark chocolate chips
drizzle of raw carrot honey
sprinkle of unsweetened coconut
sprinkle of cranberry orange Galaxy granola

It came out pretty good, I really liked the raisins and the crunch of the seeds in the muesli.
